It can be used as crutch, but it's not "just" a crutch. You choose what you want to emphasise and de-emphasise in a photo, and occasionally, you do want to de-emphasise color, or emphasise it in a different way by doing greyscale photos with a colored filter over the lens.
People who solely do greyscale photographs are horrible, though. I want to capture the world around me, and most humans aren't colorblind, so to do only greyscale photos is an unfortunate and obvious statement that can distract the viewer.
I've found nighttime greyscale images are nice though.
In this photo, I wanted to emphasise time. I didn't need the red lights on the plane for that, nor the orange color of a light-polluted sky.
