This is a shadow/highlight recovery. Just under +2.5ev shadows and -2ev highlights. The highlight recovery is actually too much because it creates an HDR look but I wanted to illustrate the max possible.
Note that the processed version has a lot more shadow and highlight detail. With the exception of your first shot which does recover some shadow detail, none of your shots differ much in the shadow/highlight detail between original and processed. You're not recovering detail, you're altering brightness, color, and contrast. "Color grading." Which is great...glad you found a style you love...but it does not depend in any way on Sony sensors or the newest sensors.
I blacked out the lens and file name so you can tell us which FF camera shot it since you have so much experience and know so much about what cameras can do what.
