Epson flatbeds are notorious for not being properly focuses at the point where the film lies. Scanning (both the scanner itself and whatever automated settings you're using) will make a WAY bigger difference than your camera, lens, and film choices will if digitized files are your end point.

No need to switch 100%. Keep a film camera loaded with nice film for special photos or when you look outside and the light is insanely nice. It may take you a month or two to finish the roll, but if you shot selectively it will be full of bangers.
