A given lens projects an image with a resolution of let's say 100 lines/mm.
The larger the sensor, the more lines in total can be resolved, making the image sharper.
Then there is diffraction, diffraction is more of an issue with sensors that have small photosites.
If you close your aperture to about f/8 or more, your optical resolution in lines/mm gets limited due to diffraction.
I'm not going to explain the physics behind it, but you can test it yourself by taking pics at f/5.6 and f/36, f/5.6 will be much sharper.
