Moriyama's pictures of prostitutes are best appreciated as part of a cohesive body of work, which was representative of one period, but he has experimented a lot over time so you can find almost any style you want within the Moriyama style.
You might be interested in other Japanese photographers like Shomei Tomatsu.
If you live in Paris you could go take a look at the Maison Européenne de la Photographie. It's cheap, they rotate their exhibits frequently and it is excellent to broaden your horizons.
As for technique, which is orthogonal to artistic/stylistic considerations, either TriX and learn how to process it / abuse it as a previous Anon said, or any digital camera that will let output raw files, with a "normal" lens (anything between 24 to 65mm focal length; your phone probably has a 24 or 28mm equivalent if you want to get a feel for it, iPhone 14 is 26mm).
Digital is more forgiving and with monochrome processing all your chroma noise is going to end up as luma noise, which is usually more palatable.
Processing monochrome images is also very different from color, the design language is different. Explaining all differences would be beyond the scope of a 4chan shitpost but it's ok or even desirable to have pure blacks and/or pure whites in monochrome; Alan Schaller is a good example of this I think. Sebastião Salgado of course also springs to mind for a different style of high contrast monochrome photography. Then you're going to have to play with monochrome conversion process and tone curve to get something you like. Don't be afraid of using local adjustments.
