Honestly, I don't touch the colour settings unless I'm doing a specific film style of edit (if I'm bored). I do everything through lightroom but for this competition I'll do the final edits on photoshop, but a normal setting for me is:
>+40 contrast>highlights no lower than -30 (and not much higher than +10 because this blows out the highlights on the tarmac easily)>shadows 0 - +20. Anymore looks bad, especially because...>blacks -30, I like the blacks to really be darkerEverything else is how they come out the camera, I don't do colour correction, in part because I haven't learnt how to do it properly so I'd rather have good photos that are natural than slide the sliders about and occasionally come up with something good, without know how to do it every time. I'll probably look at learning it this winter though!
