The amount of sharpening is an esthetic choice, but most people prefer at least some sharpening in the vast majority of pictures to make them "pop".
Focus and sharpness are two completely different things.
And even with perfect glass, a perfect sensor and perfect focus you can't always achieve a sharp edge because it just wasn't there.
