Most of people into LF go for landscapes, some architecture, others mainly do portraits.
Generally speaking, for landscapes a lightweight folding camera is preferable.
You want to cut on weight and space, extreme movements are not needed.
Portrait can be done in a studio, so whatever LF camera fits.
For architecture, people tend to go with monorails since they allow great movements but they are also heavier and a bit cumbersome.
Speaking of lenses, if you stay on 4x5" you may have a easier search.
Lenses with an image circle that cover 8x10" or more tend to be rare and way more expensive, they are often also bigger and heavier. For 4x5" you can check them here:

But I have been carrying only 90, 135, 210 and the Nikkor telelens 360/500 lately. Keep in mind that the 35mm (or fullframe) equivalent focal length is roughly a third. Hope this helps.
