Moist, shiny scleras provide a pop of contrast (the specular highlight against the black pupil) to anchor the viewer's path through the composition.
I have removed specular highlights a few times in my career, but it's unusual. Attaching an example. Interesting idea though. I'll definitely at least see how it looks.
