What happens is, at first you lose saturation and contrast in the sky, the deep blues start turning grey, and then you lose all detail after some point.

You'll have a hard time recovering shadows from Provia (or any slide), even when it's *correctly* exposed. Anything other than a drum or Noritsu and the like will struggle. Let alone underexposed 3 stops.
