Almost none of them have any sealing, and most have motorized retractable lenses that are driven by plastic gears. I've had several cameras die after dirt got into the lens mechanism and jammed it. At least with an interchangeable lens camera you have a better chance at being able to clean the lens out or replace it, since the body is unlikely to be damaged.
You're also overstating the water issue. It just isn't a problem unless you dunk the camera in a stream or something. In a couple decades of climbing, hiking, caving, and biking with cameras, I've never seriously damaged an SLR. I don't use any sort of cover unless it's pouring rain, and then I just put the camera in a grocery bag with a hole torn for the lens.
>>3485136Micro four thirds is hard to beat for this application. The cameras are light, small, reasonably durable, and have good image stabilization. There are some good pancake lenses and small telescoping zooms. They're also pretty cheap and some models have weather sealing.
