If you don't have a meter you just sunny 16 it and hope for the best. It works because film has enough DR to fix it in post. There's no "mathematics" surrounding it, you just look at how bright it is, compare that to how bright it was when particular settings were appropriate and make your best guess. Here's a table from wikipedia you can memorize to get a ballpark.
