You can still focus stack even hand held. Just take lots of photos and take care to center something. Then when auto-aligning in Photoshop you'll only need to trim some of the boarder off where they are not matching up. It is easier than most people think, but you do need enough light to get your exposure speed fast enough to get rid of motion blur from your hand.
