I've always used APSC. Some anons use it for wildlife and for some telephoto gains. Yet my favourite are wide angle lenses. One of the advantages is that APSC is smaller in size, so a it's a little more discrete.
I usually shoot on the D500 with continuous auto-focus and exposure set to manual most of the time. Sometimes it's the autofocus. Other times is taking a quick burst of pictures what makes the trick.
What I've learnt over the years is that a sharp picture with noise is more preferable than a noiseless picture with motion trails all over.
It's better to capture spontaneity and emotion and to get them at the right moment than to set your camera for a noiseless picture.
Sometimes I see myself as a hunter. A gunslinger if you will. Sometimes I fire from the hip and sometimes through the viewfinder. And with a little bit of practice you learn about pacing the moment. Then you just pickup the camera and steal the moment.
