Basically, using the menu, you go from start the finish and set every setting to the way you want, and later a menu category will have "Memory" & "Memory Recall". Select "Memory", and then one of the three memory slots.
Now every time you use the camera, you have a handy way to quickly get to your personal preprogrammed "night settings"
There is another setting you should either switch on or off, depending on wether you have patience. "Long Exposure NR" (noise reduction) essentially doubles the time for long exposures, since such exposures mean the sensor might heat up from use, producing artificial noise/interference that shouldn't occur even on ISO100 for instance. One the image is taken, it then takes another less sensitive same-time exposure and checks that black areas are actually black, whites are white, etc.
