I honestly don't like shooting in color very much, I do it sometimes but very rarely. I have I think 1 post with multiple images where I sprinkled some color in there but you're right about the "theme". I want to keep my wall B&W. but it's not the reason I don't shoot color. I find B&W to be less distracting and it leaves more to interpretation. I want to stimulate peoples imagination and I think color doesn't let the mind wonder as much.
