They are local, the customer service is incredible, and the shipping is what changed the game for me. Nearly all of my customers get the print shipped to them since they are on vacation and don't want to / can't carry a five foot panorama home. Their product looks nearly identical to the other lab I was using. I still use the old lab for small bin prints and do those on a light jet to give them a nice pop over most other photographers prints. I have a film developer and a drum scanner, but I still haven't decided to do any printing at home aside from black and whites up to 16x20.
I do agree with you. I enjoy darkroom work but really just on my own schedule. It would be exhausting spending every weekday trying to fulfill print orders between shows and would burn me out. I'm at a great point between price, convenience and personal freedom right now. And even still, it's not impossible to have a customer spend up to 5 digits at my booth after they pick out several pieces.
