You aren't really missing out by using aperture priority. I've also got a nikon fe that I can go full manual but all I would really be doing is setting my aperture then matching the needle with the shutter speed, pretty much the same thing just slower. To shoot in faux shutter priority why not just adjust the aperture to get the desired speed
