They also have application specific hardware and operating systems to process the output from that fast enough and efficiently enough. And to add to that cost, most cameras involve significant amounts of hand assembly. A macbook or iphone is just a couple slabs of discrete layers. A camera is 3 dimensions of multiple layers going in every direction with connecting heatsink tape and wires snaking through - all covered in switches. DSLRs are even more complex with hardware for timing and damping the mirror and additional AF sensors and a second optical path with its own translucent display yadda yadda.
Maybe if you bumped your budget up to $900, which would start getting you X-T3s, X-T4s, A7IIIs, A7RIIIs with some dilligent deal hunting, you would start to find USB-C plugs with sorta slow speeds.
