For example, I know Mosport has shuttle service to get out to turn 5 during the bigger races. Saves you a lot of walking. Turn 5 is excellent for catching action. You can see all of the last turn and all of the first turn from the general seating (read: grassy hill) along the front straight, and with a long lens, see right into the pits. This gives you the opportunity to catch cars as they go through (spin) the first right hand sweeper, or hit up the last left/right onto the front straight. Lots of space along the fence too. Turn 2/3 don't have much photo opportunity. You can get close to the fence, but it's very awkward. You get real close to the cars at 2's bridge, and the marshall's station at 8. Pic related, shot from 8. 105mm equiv is much too long, but I was so busy having fun, I didn't really chimp and decide to switch to a wide angle.
The paddock area is easy to walk through, and pretty great. The lower end series aren't usually fenced off, so you can get close to the cars and take a look. Just don't intrude on the actual pit areas. Track food isn't bad, for track food.
Hope to hell you're visiting on a cool day. Ontario in the summer is not for the faint of heart.
