The deluxe one by GSO comes with a nice focuser and a nice 70° 30mm eyepiece, and a cooling fan by the primary mirror so that you can use it faster (though a cooling mirror is not needed with an 8 inch, just put it outside an 30 minues/ an hour before use, a fan will speed this up slightly)
If the 8" from skywatcher is the one closest to you or cheapest, its a good pick too.
Considering imaging, you can fairly easily attach a DSLR to the 8" and take images of the moon and planets (or rather, take videos, stack them and process them), but thats basically it. But if I was you its where I would start, and an 8" dob is going to stay useful for visual and is basically the best entry point into astronomy in general. Get a 6-7mm eyepiece for some good magnification for planets. Maybe the svbony 6mm goldline if you want something cheap.
You can use your DSLR and whatever relatively fast lenses you have for deep sky if you get a tracker like the sky watcher adventurer pro. If you want to do milky way landscapes, you only need a tripod.
I got pic related by just attaching my phone to a 5" dobsonian, kinda neat.
