ISO, Shutter speed, and Aperture form what people call the "exposure triangle". That is, these three components make up how bright your images are and the way light looks in your scene.

Each one has a primary effect of increasing or decreasing the amount of light. But each also has a secondary effect that I will briefly outline.

>ISO
Primary effect: Increasing ISO makes your images brighter by making your camera's sensor more sensitive to incoming light.
Secondary effect: Increasing ISO too high will make your images "grainy". This graininess is what we call "noise". And too much noise looks bad. So you tread a fine line with this setting and your camera's capabilities.

>Aperture
Primary effect: Increases or decreases the size of the hole in your lens to either increase or decrease the amount of light coming in. The size of the hole is inversely proportional to the f-stop. So f2.8 is a bigger hole than f11.
Secondary effect: The larger the aperture hole (which means a smaller f-stop number), the more shallow your depth of field. This means that you get that nice blurry background effect with a small fstop (large hole). Increasing fstop (decreasing hole size) brings more of your image into focus.

>Shutter speed
Primary effect: Changes the amount of time the camera sensor is exposed to light by increasing or decreasing the speed at which the shutter moves.
Secondary effect: By having a slow shutter speed, you can have your subjects leave motion blur if they move while the shutter is still open. By having a fast shutter speed, you can essentially freeze time and the moment.

Now, the primary effects I listed all have to do with exposure and light. But sometimes, the desired image you're looking for prioritizes one of the secondary effects I listed rather than a primary effect.

Example: You want a nice blurry background in your image with a lot of subject separation.

In this case, you are going to have a small f-stop number, which means a large aperture.

Sensor size is more important than amount of megapixels but I'd imagine they all have the same size. Megapixels correlates to size of the image and thus the overall image quality.

ISO is a light sensitivity setting. At daytime you use a lower ISO because there's a lot of light. A low ISO means high image quality. At night you would use a high ISO because there's not much light to work with. A high ISO means you'll be able to take pictures in low light but it will introduce grain.

The effect is called bokeh. It's what happens when a photo is shot with a wide aperture to create a shallow depth of field. I suggest you read up on basic photographic theory, it'll help you understand how images are constructed.

To learn where you're going wrong you'll need to understand the fundamentals of photography. Composition, exposure triangle etc. It also doesn't help that the camera you have isn't exactly suited to this. If you're going to use these images in a professional setting I would suggest splashing out a bit more and getting a decent mid-range DSLR. You're also going to need a tripod and some artificial light sources, as well as bounce cards and the ilk.

You should learn how to use manual modes. Aperture priority is my favorite for everyday shooting, it gives you control over aperture (see cheat sheet) and sets everything else. 24 frames per second is cinematic standard, 30 is better for youtube sort of thing.

The rest of the questions: read the manual and figure it out for yourself. You don't learn by being told stuff
