There's no reason why you'd need 128GB cards, nor why you'd need to splurge on the fastest ones. Storage really shouldn't set you back more than $40 for a quality CF card appropriately rated to the camera. You could even use a CF-SD adapter and use "slow" (by modern standards, but fast compared to the camera's capabilities) UHS-I SD cards.

But still, it's not like the 5DII won't focus on what you want it to if you know how to use it. A beginner can get a lot of use out of one of these cameras, and average prices should be about $300 less than a 5DIII on ebay, which you can put toward a quality lens.
Pic related is an example of what can be accomplished with a 5DII and the legacy EF 100-400mm f/4.5-5.6L IS USM lens, which can be obtained used for much cheaper than the "II" version, and I don't really think you need the "II" version for a 21 MP sensor anyway.
