pallete, to know the interactions between hue-saturation-lightness beyond photoshop (tip: it can be described by a parabolla, or an octave) etc, and, all-in-all, you can get creative and make prettier pictures. Without all that thinking that an artistic value would require mentally or intuitivelly, but in a very beautiful manner. This is what is usually what you'll learn when it is said you learn color by appreciating works of art, paintings, photographs, etc.
