I'd go with the a6000. They're cheap new and really inexpensive used. It's mirrorless, which is where the market is going. You'll be able to see how settings affect your photo in real time thanks to the EVF, though you should still pay mind to the light meter when exposing.

A drawback is if you want to shoot video. The a6000 doesn't have a mic input, so if you want the camera to record decent audio, you'll need a hotshoe mic like the Sony ECMXYST1M. They're $107 on Amazon and Adorama right now (normally $158).
You're going to have to learn to edit. I believe you can get the Sony version of Capture One with the purchase of a new a6000. Start shooting raw early.
