If you wanna try to keep off the beaten path, germany isn't bad. They provide a bunch of tourism to the rest of europe, but don't receive that many. I'm living in Bremen, and could be up for a beer.
Also, try Slovenia, Hungary, the Balkans. All great, and super cheap. People might give you the impression that it's dangerous, but it's all lies and misinformation from fear. Of course there is poverty, but it's nothing like the (comparative) poverty in the cities of the developed parts of Europe. I think Paris and London are a lot more dangerous than Europe's poor countries.
