I have a Canon FD 55mm f/1.2, the multicoated version, I plan on using it for portraits and video, what would be the correct amount of sharpening to apply in post when shooting wide open?

It will depend entirely on the photo. There is no formula for art. You have to have an eye for it.

I use 12 for most of my shapening, but I use good lenses.
You are using deprecated garbage, so I'd probably start at 16 and work from there.
