Is there a way to convert a Nikon sensors cool, sharp, images to look like Canons soft, colourful, images with hard blacks?

I love my nikon and the way it handles, but i'd like to experiment with the oversaturated curves of a canon.

No. This is literally impossible to do, even with software such as Photoshop or Lightroom that is especially made for this purpose. Just forget it.

Create your own CMOS sensor calibrated to your liking and use that. Although if you can do that, you're wasting the power creating only this one sensor.

its actually not that hard to make a CMOS censor, its just 4 transistors per pixel

DxO optics has a rendering mode option where you can choose the average color profile from another camera body. Note that even between samples of exactly identical cameras, colors and tones differ.

Photoninja has the option to export raw files as log tiffs with no under-the-hood adjustment, perfect for manually controlling where Lightroom cannot.

Shoot -3EV and recover in post for Canon's trademark film-like noise and low dynamic range which provides natural contrast.
Use old nikon lenses, like really old.

Set vivid profile in lightroom and push color tempurature lower for more warm tones.
