When doing hardwood floors or cabinets (which I do for a living) you have a leave a margin of space between the edge of the floor or cabinet panel or the wood's going to warp or split. Even MDF (google it) will warp when moisture content changes drastically. It has literally nothing to do with using green wood.

>They will be hand carvedYour best bet is to get them cnc milled, finding someone who can carve by hand well, and who will do that kind of work for a price that you can make money off of is difficult- unless you know someone in asia. A CNC lathe is more precise anyways. And most serious cabinet shops tend to have them.
>WalnutIt finishes beautifully naturally (i.e. no or a very sublte stain), don't listen to the cock stains who think big $ = nice wood, although walnut can still be pretty pricey. Walnut is hard so my advice would be if and when you found a guy/company to make these is to get him to make one or a batch out of maple (birds eye if you want to almost see what burl wood looks like), its harder and more difficult to carve but is much cheaper than finish quality walnut, if they can handle maple, walnut should be no problem. Personally if you want top shelf shit, go with burled wood or cocobolo, both of which can finish to be insanely beautiful; the latter of which has a nice smell that always comes of it even when its varnished because it's an oily wood, which is something I've always enjoyed.
