Fool frame 100% replaceable by M4/3 for product photography? Absolutely. Will FF give you better ultimate IQ for general use? Most of the time, yes. Do you NEED full frame? Probably not, unless you have a very specific need for extremely shallow DoF or will be competing with dozens of other photographers shooting the same event, and only one will be picked based on absolute image quality.
Can M4/3 give you the ability to carry more gear (flashes, lenses, bodies, filters, other stuff) in a smaller bag than a FF kit? Absolutely. I'd say 95% of professional photographers would get by just fine with an E-M1 or E-M5II and a the M4/3 lenses available now.
