Yes you could have dropped 2 stops and shot at 800 iso (try and stick to 100,200,400,800 etc as they are full stops and will help you do quick maths whilst out) which would have given a cleaner, but darker image. Unfortunately canon are way, WAY out in last place when it comes to noise and low light (over a decade behind any other brand camera). So you do need to consider each exposure very carefully, your settings weren't wildly wrong, but you have found a limitation in your camera, 1600 iso on a full frame or sony sensor camera would have given a more usable image.
But sugar there is a fucking retard. 1/1000 at 800, could have dropped to 1/250 iso 200. F5.6 could have been f4, iso 100, which would give better isolation and much less grain and noise. He did EVERYTHING wrong.
I would say however, don't panic too much when it comes to noise, 99% of your shots won't be printed, and the max they will be seen on a screen is 1920x1080, which means you will be downscaling to a maximum 2MP, most of the noise issue will dissappear. In fact if you could please read the sticky for here you would see we recommend jpg and a max long edge of 1000px. Photos don't have to be large to be appreciated!
