Shooting a jpeg in your camera will give you a pre edited, compressed picture. The camera will do a little post processing, like sharpness and contrast, and spit out the jpeg. Unfortunately it won't do a really good job.
With a raw you'll get a bigger, untouched file with a whole lot to work with. You'll be amazed what data you can find in your pictures and how you can play around with it.

There are other programs that do the same, such as Raw Therapee, but I never used them so I can't really tell you much there.
I'm sure you are able to google for tutorials yourself, if you choose to get Lightroom.
