I only really manually set shutter speed on my digital cameras when playing around with lighting. I'm in full chimp mode when I do this, so I wouldn't even think about trying this with film.
I don't feel like film is an appropriate tool to experiment with like this, at least not when digital is around to make it quick and easy. With film I'm content with auto exposure in aperture priority or manually setting the shutter speed to match the AE (it's all the same, really). If I felt like I needed to change the exposure from what AE is telling, there's exposure comp for Av or just manually if only manual is available. To me there's no real difference between Av or M modes if in the end you're just following the auto exposure readings. But if you have both Av and M available in your camera, and you're following the AE readings, why would you need to resort to manual shutter speed at all when Av + exposure comp has got you covered? Even Av + AE-L is another good assist tool.
