To expand the dynamic range of an image. Most of what you see online is tonemapping, not HDR. Some people call true HDR "exposure stacking" which is very useful in stuff like real estate shoots and some flavors of landscape.

Except Daido is actually a pretty decent photographer and his shots don't stand on the whole 'high contrast b&w' as an artistic crutch. He did/does a lot of work in colour as well.
