I'll not critique your dogshite. For best sharpness keep the iso-speed at the lowest rate, and set the aperture starting from 2 stops below the widest aperture to f/11 at max for full-frame cameras and go for the shutterspeed it takes to expose to the right of your histogram, that's what tripods are for.
Adjust the aperture so that it just meets the dof, in no case lush. Only increase the iso-speed if you have trouble with underexposure.
For sensors smaller than ff even aperture numbers below 11 give full dof. Pushing exposure and highlights in post is to be avoided as it harms too.
