I don't. I belive in properly exposed shots to get the best snr.

I do. However, I'm always annoyed when I have to concentrate on technical stuff instead of composition, framing and expressions. For me manual settings in a varying environment are just tedious. Auto ISO gives me the freedom to specify ranges for shuttertime and ISO along a fixed aperture value where possibly in the last variable a reduced fill flash becomes key light.

decent film stocks have little to no grain.

grain adds texture to a picture. not to say it always works or looks good, but it has its place like every other effect.

I constantly have trouble with any auto modes even auto white balance. I trained hard to go full manual in quickly varying situations and it really helped a lot.

Even auto modes need experience and they got better over time.

Like often It's also a matter of taste and I only like to protest against the demonizing of auto settings. I enjoy it especially when time is critial and for me it always feels like losing flexibility when I have to switch to manual because of a failing auto or limited settings possibilities.

I guess what I'm saying is why not take the camera's (possibly misinformed) suggestion as a starting point then bump it up or down, instead of scrolling around from 100 to 12800 trying to center the bell curve of the histogram?

If time is super crucial you should already, out of trained habit, flip the dial to "A" burst some continuous shots then flip back to "M" for fine tuning settings. That ensure something gets the subject while you calculate what you want in your head for manual.

I usually apply like 5-10 grain to my photos for texture, not so much for the "film" look.

Depending on the game I don't mind. Works well in cuphead and Bloodborne, I remember crysis did it only when looking through water which was pretty neato.

Workflow, take hundreds of photos in AWB with varying WB and having to correct each one in post. As opposed to taking a few seconds at that moment and adjusting WB accordingly.

That being said, I do both. Correct the bad ones in post but try to get it right at capture. Only because correct WB in preview is good for the mind.

What's near dark? I have pushed Tri-X to 3200 and used an f/1.8 lens fully open and even then had to use 1/30 shutter times to get usable results in what I call near dark. To use ISO 100 in those same circumstances you'd need a lens of a full 6 stops faster than f/1.8, which would be somewhere around f/0.2. For reference, that would mean the aperture needs to be 5 times as wide as the focal length of the lens. You'd essentially be using a glass fruit bowl as a lens.

I just use a gray card for the first image I shoot in a certain lighting and use that to apply the white balance to all the photos from that set along with lens corrections.

Why/how would shooting manual give you blurry shots?

Maybe under or overexposed if you're new but you'd think, knowing the what the shutter speed will be means you'd have less blur.
