Your phone processes the data from the sensor, chucks most of it away and spits out a jpeg file in some fairly arbitrary “style” which you then edit, except you’re editing a relatively tiny file which can’t recover the details and colours you want without creating that grainy, murky mess you’re seeing, especially in the skies. To;dr editing a raw file will give almost infinitely better results, IF your phone lets you save those raw files.
