Every time I see a pic on instagram or even here it's like PhotoChad going 'u just have to curve urself bro'

But seriously for the life of me I can't make sense of how to use them in a way that I can predict or tune the results to my liking. I can get decent stuff, but just out of chance or messing with it randomly.

imagine taking a photo, for simplicity, bw.
now every pixel has a brightness value.
often, you want to manipulate the brightness of your image in some way or another, lightroom gives you several options like exposure or contrast slider. exposure for example adds some brightness to every pixel in your image, or subtracts. now what if you find that the darkest parts of your image could be slightly brighter while the lightest parts are fine? well you want to assign a new, higher brightness level to all pixels below a certain level and keep the rest unvaried. in general what the curve tool enables you to do is to assign a new brightness level to all brightness levels at once.

you read the tool just like any graph in math middle school: x-axis goes in, up to the graph, y-axis goes out, for example in your pic total blacks (at zero) get mapped to roughly 12% brightness which becomes the new darkest tone. this creates an aspect of the old film look where no true blacks are apparent (because creating true blacks in silver gelatin print is harder than pure whites)

another useful application is to apply contrast, which is just the stepness of the graph, to selected areas. for example if you have some very soft highlights in a persons face you can in fact determine what brightness the persons face has, and increase the stepness of the graph in that area to make it seem like a more interesting contrasty light. keep in mind thought that the fundamental theorem of calculus dictates that the sum of the stepnesses is just the overall tonal difference which is limited, so increasing contrast somewhere means to take it from other parts of the image.

..the standard s-curve is an immediate application: because the most detail is usually perceived in the midtones, one keeps the midtone stepness (=contrast) relatively high, and decreases stepness towards the black and white point to compensate, where details get more and more unrelevant.

experiment a little bit with your pictures, play with the black point, apply additional stepness, maybe even two s-curves in one picture for different brightness areas and see what happens.

oh and also if you do color, the channel switch becomes relevant: same thing but only for the rgb subpixels. you rarely do individual channels, but you can do cool stuff and good film emulations with slight colorshifts at certain points.

Ya, I too would like curves cleared up for me.

Is it any different that just using the sliders? I feel like the sliders just give me more control that moving some line on a graph does.

Why do people make such a big deal about it when there are sliders that allow for more fine tuning?

Curves allow you much more precision, since you can plot multiple points for highlights/shadows etc whereas the sliders just apply evenly to that whole quarter of the histogram. They allow other things, like moving the black point and whatnot, but if you play around with them you'll see they can be used to apply a much more deft touch to how your shadows sink to black and that sort of thing.

You see that the reds right there have different levels? Like some are taller than the other. That means those are the higher tones of the color. Crank this up and you’re get lighter tone on that level. But usually the left spectrum is for darker tones, the right is for lighter tones.

Yup. It is not the same. Histogram is the key, though. Unless you know how it works precisely, you'll have a lot easier time with sliders.

Find the dropper tool!
It'll help you a lot to get an understanding. With the dropper tool you can click on any part of an image you want to change and then drag up to lighten it or drag down to darken it. It really simplifies the curves tool.
