This Rubikon pinhole camera seems to have a zoom built into it. Is that real? If so, how could this work?

The distance from the pinhole to the film/sensor plane is the "focal length" of the camera. Just slide it in or out for zoom

You can make one using a pinhole body cap and an extension bellows or tubes as shown here:

Technically pinhole cameras do not focus, but I know what you are trying to say. Yes, this would be used to get optimal sharpness at a variety of focal lengths.
