First. You've huge focal ranges even at few meters when shooting landscape at f/1! So, it's completely the same if you use focus shift or focus and recompose. You should be able to judge the shift by feel anyway, so few can do whatever technique you wish. What you're talking about are meme shots anyway, so since you're afraid to post one, here's mine.
Second. You're absolutely naive thinking one spot is useless in modern time. Same example. I'm focusing on the grassbuds. Near focus, meme snapshit. I'm taking it fast, as I've mountain to climb. Multiple spots would certainly focus on far plane, or even too close. One solution is manual focus, but since I've cam already in single spot, I let it focus on the grassbuds, half press the shutter to keep it saved, reposition to get a decent frame of background, shot and store cam in backpack.
