the first shot would've worked better if the steering wheel had a badge in the centre with the existing settings, with focus set on that, but I think for the rest of the dash shots, you might've been better off bumping up the iso and stopping down some, can be tricky when shooting handheld though
I think thin dof shots work much better for close up detail shots of one particular subject, or at least a wider shot done in a way that explicitly shows attention on just a single subject, can be tricky to pull off
try to be very mindful of cutting things with the sides of your frame also, the row of gauges down the bottom and volume knob

this can be tricky with all the little bits on cars lol, but it really makes a good shot stand out to me when everything is tidily arranged

my advice to improve on these would be to start moving your subject from the centre of frame if possible, this can be trickier with bodies that haven't got top of the line AF systems, but still very doable, esp when stopped down quite a bit
I'll often prefocus if I want to shoot with the car hard up against the edge of frame, highly recc using back button af if you aren't already
be very mindful of your backgrounds also, the last shot is hurt quite a bit by the trees and poles sticking out of the top of the car imo, this becomes something you need to pay much more attention to when shooting at higher shutter speeds
