But really the key is just finding sweetspot between focus point and background. Central parts needs to be all in focus, petals usually as well, and you want to have background blurred at least a little. You're doing that with focal length of lens and aperture. You tend to go to 50+mm range, even 150mm or larger, and to low apertures. But you can go at it with fisheye as well, no real restrictions, just whatever brings the best out of the subject. Keep camera in A most of the time, and experiment with different f numbers. Iso is not as important, you can bring back really grainy shots in postpricessing, so you can pump it up when needed, like in windy and low light situations. The tricky thing is perfecting backgrounds, and you've huge range of approaches there. Just use viewfinder and shimmy around the subject like a madman till you find something catchy, then refine it further by trying different apertures.
Also, avoid motion blur, I think you've some in your shot. Wind is constantly present, and handshake as well. Use higher shutter speeds, and work on steady hands.
