Some lenses will just never be possible, and IBIS will never be able to match other vendors. Even if the A7III is better for now, it's near the peak of its potential, whereas Nikon's new system is just getting started. It's very possible that (assuming Nikon doesn't just completely fuck this up and the system actually takes off) in another 5-10 years Nikon will have lenses and features which are just physically impossible for Sony to match.
If you're planning to jump into one system or the other, I think Nikon has a lot more potential to grow.
