It's not always about making it look surreal or fake, but the truth is that even just replicating what the human eyes see is so much easier said than done, especially due to the wide dynamic range and color depth our eyes have. The trick is this: a really good looking photography probably does have a lot done to it, but because it isn't as obvious in the form of insane saturation or clarity, you don't really notice it. The kind of work I'm talking about is like local saturation, contrast and color adjustments. Several layers of selective masking and meticulous find tuning etc.
