I hate Sony color under certain conditions, but I am completely fine with it under others.
I'm very meh about Nikon colors in general, but Nikon RAWs tend to be workable into something good.
Canon cameras seem to be pretty close to what I want ooc most of the time. From what I've seen of Fuji I'm thinking I would feel the same way. But I don't expect either would be "the best color" 100% of the time for all subject/lighting combos.
I have a friend who shoots pro Nikon but is increasingly shooting Fuji. We both agree that the entire time we've known each other and been shooting, sometimes together, it seems like I have an easier time getting the colors I want than he does with Nikon. We just recently shot an even together and it was one of those instances where I had prints made and he was still fiddling with Nikon RAWs trying to get the color he wanted. Again, this is not always the case. But it's the case more often. He feels like it's almost never the case when he shoots the Fuji.
Color science is a real thing but you need a lot of experience on the systems in question to really judge it.
