To be frank none of the new cameras are perfect in any regard and no camera is really. They all have some sort of shortcoming.
Panasonic looks great, but not a huge range of lenses to begin with. If Sigma releases there's first, you could go that route, but I find Sigma lenses too large and sterile looking. But that's a great option. You could even buy them in Canon mount, use the adapter then have them converted so there's some flexibility there.
Nikon's system is great. Great ergonomics and lens availability via the FTZ adapter. They're trickling out new lenses, but many of their last gen lenses are incredible and will be that way for many, many years to come. Heck you get access to Nikon, Tamron, Sigma, and Zeiss lenses right now. If they release a native Z lens that's better, you can always sell and upgrade after you've gotten a ton of use of what you have.
The Canon R system has beautiful lenses, but that's it. Nothing that's lightyears beyond what the other systems have. The EOS R has horrible ergonomics and the delay from shot to shot is maddening. Image quality wise it's just okay. Camera features are just okay. It's a very average camera. Maybe their high-end model will be stellar, but as of now it's a dull system. That one I would avoid.
Of course you could shoot Sony, but you don't have to. Doesn't matter if they're top in the market. Why does that even matter? But I'd at least recommend Sony over Canon's current mirrorless offerings. Versus the Panasonic or Nikon options it's a tossup.
