I think what you're missing is in the "uninspired" comment. For many who do it, it's not remotely about any artistic value (that's a bonus, but not the main thing), but getting images of rare birds. A crisp, clear shot of some endangered species with shit composition is of infinitely more value than something like a striking, interesting composition of a barn swallow.
Of course, I'm speaking generally. This will be more true for some than others, but remember that not everyone approaches photography with the same goals.
