Don't use the Peak tram. It's uncomfortable, expensive and there is nothing to see. Instead get the 15 bus from the terminal underneath Exchange Square in Central. Sit upstairs, front seat left hand side.
Most people just go to the the viewing gallery at the Peak Mall. Those in the know walk along the footpath to the left of the buildings for about 20 minutes. It's called Lugard Road and eventually the vegetation clears and give you much better views of the Harbour. The footpath is actually a circuit and will bring you back where you started in about an hour or so.
TAI O, THE CABLE CAR AND BIG BUDDHA
Start early. DO NOT under any circumstance do these on a weekend or public holiday. You will spend most of your day queueing and the busses charge double on these days. Take the ferry from Pier 6 from Central to Mui Wo. There are two types, slow and fast but there is only about 15 minutes difference, most people just take what comes next. From Mui Wo get the number 1 bus to Tai O.
After Tai O get the 21 bus to Ngong Ping there are only about 5 per day, download the app (New Lantao Bus Company) for times. At Ngong Ping you can visit big Buddha, buy souvenirs, be a tourist etc. When you are done with that you can get the cable car down to Tung Chung. From Tung Chung get the MTR back to Central or wherever
