Because you want a bright, daylight viewable screen bigger than 3" to actually see what the fuck you are filming
There's many scenarios in which you want proper monitoring of what you're doing, also many "high end" cameras don't even come with any screen because you're expected to use one you know what it looks like and that's right for the job
