How do you get to the point where you trips are funded so you can go shoot? How many followers (or how much engagement) do you need on IG to make it?

Look up Follow Me Away on IG. They do it pretty well. Basically you need legit gear, dreamy editing on outrageous landscapes, and a cute broad in the foreground.

No, it sounds like you're not even trying. If you don't care enough to earn some money to fund your passion or learn some basic editing skills in your free time then you're fucked. People with hunger to succeed will make it instead and you'll rationalise that they made it because they're just lucky and your time will come as you develop zero skills or put any effort in at all.
